The Best Soft and Chewy Peanut Butter Cookies Recipe
- 3/4 cup creamy peanut butter
- 1/2 cup shortening, butter flavored
- 1 1/4 cup brown sugar
- 1 egg
- 1 3/4 cup flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
- 1/2 cup white sugar
Preheat the oven to 375 degrees Fahrenheit.
Scoop peanut butter and shortening into a large mixing bowl. Add brown sugar and mix on medium speed until combined.
Add egg to the sugar mixture and beat on medium speed until creamy.
Combine flour, salt and baking soda in a small bowl. Stir into peanut butter mixture and mix on medium-low speed until dough forms.
Pour white sugar into a small bowl.
Use a cookie scoop or 2 large spoons to create 1 inch balls of cookie dough. Dip each ball into the white sugar and arrange on a baking sheet.
Bake for 7 to 8 minutes.
Remove cookies from the oven and cool on a wire rack or a sheet of wax paper.
