Happy Cinco de Mayo!
Tonight, I have a Cinco de Mayo dinner menu planned for the family and I thought you might like to try some of our favorite recipes, too!

Years ago, when we were homeschooling, the girls and I did a unit study on Mexican culture. Part of the study was to celebrate a Mexican holiday and lucky for us, Cinco de Mayo was right around the corner. We made a bunch of tacos, some corn salsa and fried ice cream to celebrate. It was a lot of fun! Since then, we’ve continued to celebrate the holiday by enjoying a Mexican meal, each year, on the 5th of May.
Not that it’s a bother! We love Mexican food and Cinco de Mayo gives us a great excuse to eat more of it!
We’ve never had a Mexican restaurant nearby, but over the years I’ve learned to make a few different “South of the Border” style recipes at home, like my Cheesy Chicken Taco Soup and Taco Lasagna and those shown below.
Why not throw your family a Cinco de Mayo party tonight, too? These recipes are simple, quick to make and don’t require any “hard to find” ingredients. It won’t take long to put together and your kids will have so much fun!
Below, you’ll find 3 of our very favorite recipes to help you plan your menu…
Cinco de Mayo Dinner Menu

Spicy Chicken Tacos
- 2 tablespoon oil
- 4 chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper
- 1 pinch cayenne pepper
- 1/4 cup water
- 4 large tortillas
- Toppings of your choice: lettuce, tomato, cheese, jalapeno peppers, onions, lime, sour cream, ranch salad dressing, etc.
Heat oil in a large skillet on medium-high temperature. Add peppers and onions. Saute until the vegetables are soft.
Add chicken and continue to cook on medium temperature until the chicken is golden brown.
Combine spices and water in a small dish. Pour over chicken and vegetables.
Serve chicken and vegetables over warmed tortillas.
Add toppings as desired. Serve warm.
Fried Ice Cream
- Deep fryer and oil
- 1 pint vanilla ice cream
- 1/2 cups cornflakes or frosted flakes cereal
- 1 tablespoon cinnamon
- Chocolate syrup, honey and/or whipped cream (optional)
Scoop vanilla ice cream into 4 large balls on a plate and place into the freezer.
Preheat deep fryer to 375 degrees Fahrenheit.
Combine cornflakes (or frosted flakes) with cinnamon in a small bowl.
Remove ice cream from the freezer and quickly, roll in the cornflakes mixture to cover.
Drop cereal covered ice cream balls into the hot oil. Cook for 10 to 12 seconds and promptly remove.
Top with chocolate syrup, honey and/or whipped cream. Serve immediately.
