I love salt and vinegar chips. When I was a kid, I’d eat them by the bagful. And not the little snack sized bags, either. No, I’d sit down and consume the entire giant bag.
You know, the ones labeled “Family Size”…they should’ve been labeled “Vanessa Size” instead.
Which probably explains my weight problem in college.
I don’t eat them nearly as often these days, but, my favorite kind of salt and vinegar chips are made by Humpty Dumpty. Occasionally, I’ll pick up a bag when I’m grocery shopping and if no one else in the house touches them, they’ll last for a couple of weeks.
The first time I ever had the Humpty Dumpty brand was about 17 years ago. My husband and I were visiting his family in Maine (my first visit there, ever) and his uncle offered me some.
And I fell in love!

They are so salty and vinegar-y (is that even a word?!). Honestly, there isn’t another brand that beats the flavor of these chips!
They’re sold all over New England, but if you live elsewhere, you can buy them on Amazon, too.
Anyway, after my daughter’s graduation party a couple of weeks ago, we had a bunch of potato chips and snack foods leftover. Which meant that I had to clean out the snack drawer before I could put any of them away.
You know how it goes…everyone has to open the new bag of chips. So, of course the old ones, with the scraps, just end up piling up and no one eats them.
Crispy Salt and Vinegar Chicken Comes to Life
While throwing away tons of
money chip bags with a serving or so, left, I realized I could actually use most of the scrap chips as bread crumbs instead of just throwing them in the trash.
Since I already had chicken out to thaw, I figured why not give it a try that night?!
So, I used the leftover salt and vinegar chips. And guess what?
This Crispy Salt and Vinegar Chicken turned out to be some of the most delicious, dripping with flavorful moisture, chicken that I’ve ever made!
Seriously…this chicken is so good that my family has already asked me to make it again.
Less than a month later.
You have to try this chicken recipe!
First off, you’ll be saving a ton of money by using up your leftover potato chip crumbs instead of throwing them away, while buying new breadcrumbs.
Secondly, you could make any flavor chicken you like…

The list goes on and on! Any kind of potato chips you can buy can be used in this recipe!
Oh yeah and did I mention that you only need 5 ingredients to make this chicken?
And one of them is salt and another is water?!
So, what are you waiting for?
Pull out some chicken from the freezer and make this Crispy Salt and Vinegar Chicken tonight!
Here’s the recipe:
- 1 cup water
- 1 cup apple cider vinegar
- 2 tablespoons kosher salt
- 4 chicken breasts
- 4 cups salt and vinegar potato chips, crushed
- Combine water, vinegar and kosher salt in a large bowl.
- Add chicken breasts to the bowl and allow the meat to marinate for 30 minutes or more.
- Preheat the oven to 425 degrees Fahrenheit.
- Pour the crushed potato chips into a large bowl.
- Remove the chicken breasts from the marinade and dip into the crushed chips to cover.
- Arrange breaded chicken on a large baking sheet.
- Bake for 15 minutes. Flip chicken over and continue baking for an additional 15 minutes or until golden brown.
- Serve with french fries.
