I hope you had a wonderful day with your family! We started out the day with a pancake breakfast at the firehouse. My husband is a volunteer fireman and had to work the breakfast, so he brought my oldest daughter along so she could rack up some community service hours for school, too.
My youngest daughter and I slept in and had a little bit of a lazy morning before we went down for breakfast. Then, we all came home and searched for what the Easter bunny left the girls. After the baskets had been found, we chilled out, watched some TV and relaxed for awhile. It was a great way to spend Easter morning!
We decided that instead of having the traditional ham and sides we were going to have an old-fashioned style cook-out for our holiday dinner. We made hamburgers and hotdogs along with potato salad, cole slaw, fresh homemade refrigerator pickles and this amazing Strawberry Shortcake Trifle with Angel Food Cake.
It was so nice to actually spend time with the family instead of standing in front of the stove all day, like I do on most holidays.

Before I share the recipe, let me just warn you that it takes a long time to make! It’s really simple to put together, there’s just a lot of steps and quite a bit of refrigeration time. So, don’t plan to make this on a busy day! Plan ahead and make it when you have all day to fiddle with it!
Okay, so now that you know it takes a long time, you are probably ready to click the little X in the upper right hand corner, but don’t!
You’ll so regret it if you don’t try this recipe!
Some things just get better with time and this Strawberry Shortcake Trifle is one of them…take the time – make it right, put some love in it and your family will thank you.
Here’s the recipe…
Strawberry Shortcake Trifle With Angel Food Cake
- 2 boxes strawberry gelatin mix + water as directed on the package
- 1 angel food cake
- 2 batches Homemade Vanilla Pudding Without Cornstarch (or 2 boxes of vanilla pudding mix)
- 2 cups strawberries, sliced
- Whipped Cream
Prepare 1 box of gelatin mix as directed on the packaging.
Cut the angel food cake into small chunks, about 1 inch in size.
Arrange 1/2 of the cake chunks in the bottom of a large, trifle dish.
Pour gelatin mixture over the cake. Refrigerate for 1 hour or until the gelatin is solid.
Prepare 1 batch of (homemade) vanilla pudding. Pour over the refrigerated gelatin. Refrigerate for 30 minutes or until the pudding has set.
Spread 2 cups of sliced strawberries over the pudding. Top with the remaining cake chunks.
Prepare the second box of strawberry gelatin. Pour over the strawberries and cake. Refrigerate for 1 hour.
Make a second batch of vanilla pudding. Pour over gelatin and allow it to set for 10 to 12 hours or overnight.
Serve Strawberry Shortcake Trifle with Angel Food Cake topped with whipped cream.
