My youngest daughter and I really like Mexican food but neither of us likes to eat all the junk in store-bought salsa. So, we’ve come up with this delicious Sweet Corn Salsa recipe as an alternative.
It is so easy to make that we sometimes make it and eat it with just corn chips!
Our Sweet Corn Salsa recipe only requires 5 simple ingredients – canned tomatoes with chilies, corn and spices – you basically throw everything into a bowl and refrigerate until you’re ready to eat.
I told you it was easy – No cooking required!
It’s perfect for a side dish on a busy night, for Taco Tuesday or even to serve with chips at your next party. Feel free to alter the recipe to add some of your favorite ingredients.
Over the years we’ve added beans, onions, jalapeno peppers, diced cucumbers, celery, chopped garlic and cilantro. We’ve even added melted cheese and eaten it like a queso dip.
And we usually eat the whole bowl…it’s really that good.

Supplies Needed:
Sweet Corn Salsa Recipe

Ingredients
- 1 can diced tomatoes with chilies
- 1 can sweet corn
- 1 tablespoon dark red chili powder
- 2 teaspoons sugar
- 1 teaspoon black pepper
Instructions
- Open canned tomatoes and canned corn with a can opener.
- Pour tomatoes and corn into a large bowl.
- Add chili powder, sugar and black pepper.
- Stir to combine.
- Refrigerate until ready to serve.
- Serve with tortilla chips, tacos, quesadillas, nachos or your favorite Mexican dish.
